Overnight Oats
Hello everyone! Who says cheesecake is only for special occasions? These berry cheesecake inspired oats are the perfect high protein breakfast that feels indulgent but keeps you full for hours. They are creamy, and naturally sweet from the fresh berries, giving you steady energy.
Serving size: 2 jars
Ingredients
Oat mixture
1 cup rolled oats
3 tbsp chia seeds
1 cup almond milk
1 scoop vanilla protein powder
1 banana
Cheesecake mixture
3 oz blackberries
¼ cup blueberries
1 cup cottage cheese
1 tsp honey (optional)
Directions
Add all cheesecake mixture ingredients to a small food processor, and mix until smooth. Let sit while making the oat mixture.
In a medium sized mixing bowl mash the banana using a fork.
Add remaining oat mixture ingredients to the mixing bowl and mix well.
Add the cheesecake mixture to the oat mixture bowl and mix until incorporated.
Let oats sit in the refrigerator overnight or up to three days before serving.
When ready to serve top with almonds and walnuts, fresh berries, or other desired toppings.
Helpful Tips
You can use any berries you prefer. Strawberries and raspberries, extra blueberries or blackberries all work well in this recipe!
The honey gently mellows the bright tartness of the berries, but maple syrup or agave works just as well.
For the cottage cheese I prefer to use the small curd with 4% milk fat.
You can mix the cheesecake layer by hand, but blending it in a food processor gives you a much smoother, creamier texture instead of a slightly chunky one.
Avoid using steel-cut oats, they will remain firm and chewy without cooking.
