S'mores Overnight Oats

If you’ve ever wished you could wake up to the cozy, melty goodness of a campfire treat, this one’s for you. These s’mores overnight oats bring together rich chocolate, creamy oats, and that classic graham cracker flavor in the best way. It’s nostalgic, a little indulgent, and somehow still feels like a wholesome start to your morning.

Serving Size: Two jars
Ingredients
Chocolate Oats (Bottom Layer)
1 cup oats
1 cup almond milk
2 tbsp chia seeds
1 scoop chocolate protein powder
¼ cup yogurt
Homemade Whipped Cream (Middle Layer)
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp powdered sugar replacement
1 can coconut cream (refrigerated overnight)
Vanilla Oats (Top Layer)
1 banana (mashed)
1 scoop vanilla protein powder
1 cup oats
¼ cup yogurt
Directions
Chocolate oat layer: Add all chocolate oat ingredients to a medium sized mixing bowl, and stir until combined. Divide this mixture evenly between two jars.
Homemade whipped cream layer: Open the can of coconut milk and scoop out the thick, white cream from the top, leaving the clear liquid at the bottom, and add this to the bowl of a KitchenAid mixer. Next, add the powdered sugar replacement, vanilla extract, cinnamon and mix until soft peaks form. Top both jars with homemade whipped cream.
Vanilla oat layer: First mash 1 banana, then add remaining vanilla oat ingredients to a bowl and stir until combined. Divide this mixture evenly between two jars.
Let sit in the fridge overnight, or up to five days before eating.
When ready to eat serve top with homemade chocolate granola (or graham cracker crumbs) for a classic s'mores vibe. Chocolate chips, almonds, pecans or walnuts are always a great addition!

For a real s'mores vibe, consider adding a graham cracker crumb layer.
You can add chocolate chips to the chocolate layer for a more decadent vibe.
To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats; they will remain firm and chewy without cooking.
