Strawberry Rhubarb Overnight Oats

There’s something about strawberries that just feels like comfort, and these strawberry overnight oats take that feeling to the next level. Creamy oats are layered with a sweet-tart homemade strawberry rhubarb jam that adds a little brightness and depth you just don’t get from store bought. It’s the kind of breakfast that feels a bit special, but comes together effortlessly the night before.


Ingredients

Oat Base

  • 1 scoop strawberry protein powder
  • ¼ cup yogurt
  • 1 cup of rolled oats
  • 1 cup almond milk
  • 2 tbsp flax meal
  • 1 banana (mashed)
  • 4 strawberries (diced small)

Strawberry Rhubarb Jam Base

  • 1 tbsp lemon juice
  • 2 tbsp water
  • 2 tbsp sugar replacement
  • 1 cup frozen strawberries
  • 3 stalks rhubarb (chopped)
  • 2 tbsp chia seeds
  • 1 tsp honey

Directions

  1. Make the jam on the stove first. Add all jam ingredients (except the chia seeds) to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly. 
  2. When it seems the fruit is mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
  3. Add the chia seeds to the jam and mix it together, then let the jam cool.
  4. To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
  5. Mix all oat base ingredients into a medium sized mixing bowl and set in fridge until jam is cool.
  6. Once the jam is ready, fill two jars evenly with the oat mixture.
  7. Top each jar with strawberry rhubarb jam.
  8. Let the oats sit in the refrigerator overnight or up to five days before eating.
  9. When ready to serve, top with fresh fruit, walnuts and almonds, granola or other optional toppings of choice.

Helpful Tips

  • Fresh strawberries instead of frozen would work perfectly.
  • If desired, add strawberry extract or extra diced strawberries to the oat layer.
  • To make these oats dairy free, use Silk yogurt instead.
  • Can't find rhubarb? Replace it with an equal amount of diced green apple, tart cherries or raspberries. Alternatively, you can add extra strawberries.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
