Overnight Oats
These berry overnight oats with pear jam are such a cozy, fruit filled way to start the morning. Sweet berries pair beautifully with soft, naturally sweet pear jam, creating a combination that feels fresh but still comforting. As everything sits together, the flavors blend into creamy oats with little bursts of berry and spoonfuls of delicate pear throughout. It’s a simple, nourishing, unique breakfast.
Serving Size: Two Jars
Ingredients
Oat base
1 cup rolled oats
2 tbsp flax meal
1 scoop strawberry protein powder
1 cup almond milk
¼ cup yogurt
3 oz blackberries (diced small)
4 strawberries (diced small)
Jam base
2 red pears (pealed and cored)
1/2 tsp cinnamon
1 tbsp lemon juice
1 tbsp water
2 tbsp sugar replacement
1 tsp honey (optional)
3 tbsp chia seeds
Directions
Make the jam on the stove first. Add all jam ingredients to a medium size pot, and stir constantly with medium heat.
When it seems the pears are mostly cooked down, remove from heat and mash them up. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
Add 3 tbsp chia seeds to the jam and mix it together, and optionally, 1 tsp of honey.
To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
To create a layered look, divide half the oat mixture between both jars. Next, divide the jam evenly between two jars (do not stir). Top each jar with remaining oat mixture.
Let the oats sit in the refrigerator overnight or up to three days before eating.
When ready to serve, top with walnuts and almonds or other optional toppings of choice.
Helpful Tips
Feel free to use your favorite type of pear for this recipe, make sure it is ripe.
You can swap out the berries based on what you have on hand, blueberries, raspberries or extra strawberries would work beautifully.
To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
If omitting yogurt, I recommend adding a mashed banana to maintain a creamy texture.
I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
