Overnight Oats


If you are a fan of the chocolate and strawberry combo, this one is hard to beat. The oat base is rich and chocolatey, almost like a chilled brownie batter, while the strawberry yogurt layer on top adds a smooth, slightly tangy contrast that keeps everything from feeling too heavy. These oats are easy to make, and enjoyable due to the contrast between the deep chocolate and the light, creamy strawberry topping. Perfect for when you want something a little indulgent, without putting in extra effort.

Serving Size: Two Jars

Ingredients

Oat base

  • 1 scoop chocolate protein powder
  • 1 cup of rolled oats
  • 1 cup almond milk
  • 3 tbsp chia seeds
  • 1 tbs yogurt (optional for creamier texture)
  • 2 tbsp brownie batter oat spread (optional)

Yogurt layer

  • ½ cup greek yogurt
  • 1 tbsp almond milk
  • 1 tbsp strawberry protein powder
  • 4 strawberries (diced small)

Directions

  1. Mix all oat base ingredients into a medium sized mixing bowl and set aside.
  2. Mix all yogurt layer ingredients in a food processor, and set aside.
  3. Add 1 tbsp of brownie batter oat spread to the bottom of both jars.
  4. Divide the oat mixture evenly between both jars.
  5. Top jars evenly with the yogurt mixture.
  6. Let the oats sit in the refrigerator overnight, or up to three days before eating.
  7. When ready to serve, top with pecans and walnuts, almonds, chocolate chips, additional strawberries or toppings of choice.

Helpful Tips

  • Feel free to customize the berries depending on what you have in your kitchen. Extra strawberries or banana, or raspberries all work beautifully in this recipe.
  • To make these oats dairy free, use Silk yogurt instead.
  • For the yogurt layer, strawberry extract may be used as a substitute for strawberry protein powder if desired.
  • If strawberry protein powder isn't available, feel free to use vanilla protein powder instead, the fresh strawberries will still provide enough flavor.
  • Consider adding a mashed banana to the oat layer for a creamier texture.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
