Chocolate Covered Strawberry Orange Overnight Oats

These layered overnight oats bring together the classic flavor combo of chocolate covered strawberries with a bright citrus twist. The rich chocolate orange base is smooth and cozy, the homemade strawberry jam adds a sweet fruity middle, and the creamy strawberry protein oat layer on top is packed with fresh diced strawberries for the perfect fresh finish. Every spoonful tastes a little indulgent while still being nourishing enough for breakfast.


Serving Size: Three jars

Ingredients

Bottom layer: Chocolate Orange Oats

  • 1 cup oats
  • 1 cup chocolate almond milk
  • 2 tbsp chia seeds
  • 3 mandarian oranges (diced small)
  • 1 scoop chocolate protein powder
  • ¼ cup yogurt

Middle Layer: Homemade Strawberry jam

  • 16 ounce container strawberries
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 2 tbsp sugar replacement
  • 1 tsp honey optional
  • 3 tbsp chia seeds

Top layer: Strawberry Oats

  • 1 cup oats
  • 1 cup almond milk
  • 2 tbsp chia seeds
  • 4 strawberries (diced small)
  • 1 scoop strawberry protein powder
  • ¼ cup yogurt

Directions

  1. Make the jam. Add all jam ingredients to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly. 
  2. When it seems the strawberries are mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
  3. Add 3 tbsp chia seeds to the jam and mix it together, add an optional teaspoon of honey as well.
  4. To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
  5. Chocolate orange layer: Add all chocolate orange layer ingredients to a mixing bowl and stir until combined. Set aside.
  6. Strawberry layer: Add all strawberry layer ingredients to a mixing bowl and stir until combined. Set aside.
  7. Assemble the jars: Divide all chocolate orange layer ingredients evenly. Next divide the jam evenly between the jars. Then top jars with strawberry oat mixture.
  8. Chill: Refrigerate overnight or up to 3 days before serving. Top with fresh fruit, granola, and/or nuts.

Helpful Tips

  • You can save time by using store bought jam, be mindful of the added sugars.
  • Fresh or frozen berries both work well when making the jam. You can also swap the strawberry jam for a homemade raspberry, blackberry or orange jam.
  • For the best texture, use old-fashioned rolled oats rather than quick oats or steel-cut oats.
  • To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
  • Customize this recipe by creating a chocolate cherry, raspberry or strawberry layer, on the bottom and for the top layer strawberry orange. There are several combinations that would work wonderfully to make these oats your own.
  • Add a mashed banana for a creamier, more filling texture.
