Overnight Oats
If you love banana cream pie, this is such a fun, cozy way to turn those flavors into an easy breakfast. These overnight oats have that creamy banana base with a hint of coconut that makes everything taste a little extra special. It’s soft, lightly sweet, and layered with that classic banana cream pie vibe. These make ahead coconut cream pie oats are perfect for a healthy breakfast with a dessert feel to it!

Serving Size: Two jars
Ingredients
1 cup oats
1 cup coconut milk
3 tbsp chia seeds
2 bananas (mashed)
1 scoop vanilla protein powder
¼ cup coconut yogurt
Homemade granola (see Helpful Tips)
Homemade Whipped Cream
1 can coconut milk (refridgerated over night)
2 tbsp powdered sugar replacement
1 tsp coconut extract
¼ cup shredded coconut
Directions
In a medium sized mixing bowl, mash two bananas.
Add remaining oat base ingredients and mix until combined. Set aside.
Open the can of coconut milk and scoop out the thick, white cream from the top, leaving the clear liquid at the bottom, add this to the bowl of a kitchen aid mixer.
Next add the powdered sugar replacement and coconut extract. Mix until soft peaks form. Gently mix in the shredded coconut.
Assemble in jars by layering the oat mixture evenly between two jars.
Top both jars with homemade whipped cream.
Let sit in the fridge overnight, or up to three days before eating.
When ready to eat serve top with homemade granola (or graham cracker crumbs) for a classic banana cream pie vibe. Almonds, pecans or walnuts are always a great addition! For coconut lovers, consider topping with extra shredded coconut.
