Overnight Oats

Good morning! During my weight loss journey, I was looking for satisfying, and healthy breakfast recipes that I could get excited to eat. These creamy coconut mango matcha oats offer a unique flavor with a tropical vibe. These oats are nourishing and antioxidant rich, providing steady energy to start your day strong.

Serving Size: Two Jars

Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 3 tbsp chia seeds
  • 4 tbsp coconut almond butter
  • ¼ cup coconut yogurt
  • 1 cup coconut milk
  • 1 large mango
  • 2 tbsp matcha powder

Directions

  1. Mix all ingredients, except the almond butter, into a medium sized mixing bowl.
  2. Add 1 tbsp almond butter to the bottom of both jars.
  3. Fill the jars roughly halfway with oat mixture.
  4. Add 1 tbsp almond butter to each jar.
  5. Fill jars with remaining oat mixture.
  6. Let the oats sit in the refrigerator overnight, or up to three days before eating.
  7. When ready to serve, top with banana slices, fresh mango, shredded coconut, walnuts, pecans, almonds or other optional toppings of choice.

Helpful Tips

  • Shredded coconut works well in here, either mixed in the oat mixture or served on top.
  • The coconut almond butter pairs really well with the mango and matcha however, plain/crunchy almond butter or vanilla oat spread can be a great addition.
  • If coconut yogurt is unavailable, my choice of yogurt is the Too Good blended vanilla flavor. For dairy free option you can use Silk yogurt. If you want to omit the yogurt completely, I recommend adding a mashed banana to maintain a creamy texture.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You'll Love This Recipe

  • A unique flavor combo. Sweet, tropical mango pairs perfectly with the smooth, earthy taste of matcha
  • Creamy and refreshing. The textures and flavors feel light but still satisfying
  • Perfect for meal prep. Make it the night before and wake up to a breakfast that is ready when you are
  • Naturally vibrant. The colors make it as beautiful as it is delicious
  • Easy to customize. Adjust sweetness, layers, or toppings to fit your taste
  • A fun twist on classic overnight oats. Great if you’re looking to switch things up
