Overnight Oats
These cranberry Apple Orange Overnight Oats are a cozy yet vibrant breakfast. Sweet apples and chewy dried cranberries add comforting flavor, while orange adds a fresh citrus brightness that brings everything together. This beautiful flavor combination feels comforting during the colder months, while still being light and refreshing enough to enjoy any time of the year.
Serving Size: Two Jars
Ingredients
1 cup of rolled oats
1 scoop vanilla protein powder
3 tbsp flax meal
¼ cup yogurt
1 cup almond milk
1 small apple (diced small)
2 mandarin oranges (diced small)
¼ cup dried cranberries
Directions
Add all ingredients to a medium sized mixing bowl, mix together well.
Divide the oat mixture evenly between two jars.
Let the oats sit in the refrigerator overnight, or up to three days before eating
When ready to serve, top with pecans or walnuts and almonds or other optional toppings of choice.
Helpful Tips
Avoid using granny smith apples for this recipe, they are a bit too tart. Any sweeter red apple variety works well in these overnight oats.
Dried cranberries work best in this recipe since they soften in the oats overnight, and add a sweet, chewy texture.
Flax meal is my favorite for this recipe because it thickens the oats and adds a subtle, cozy fall flavor. If you don't have flax meal, chia seeds or flax seeds make a great substitute.
To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
If omitting yogurt, I like to add a mashed banana to maintain a creamy texture.
I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
