Lemon Blueberry Poppyseed With Jam

Overnight Oats


If you love bright, fresh flavors, this one’s going to be on repeat. These lemon, blueberry, and poppyseed overnight oats have that classic bakery style combo. These oats are lightly citrusy, slightly sweet, and just a little nutty from the poppyseeds. The blackberry jam on top adds a deeper, richer berry flavor that pairs perfectly with the lemon and ties everything together. It’s simple, but the combination feels a little elevated, similar to a lemon poppyseed muffin with berries, for a filling delicious breakfast.


Serving Size: Two Jars

Ingredients

Oat Base

  • 1 scoop vanilla protein powder
  • ¼ cup Greek yogurt
  • 1 cup of rolled oats
  • 1 cup almond milk
  • 2 tbsp poppy seeds
  • ½ cup blueberries
  • 2 tbsp lemon curd
  • ½ tsp lemon extract (optional for extra lemony flavor)

Blackberry Jam Base

  • 1 tsp honey (optional)
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 2 tbsp sugar replacement
  • 12 oz blackberries
  • 3 tbsp chia seeds

Directions

  1. Make the jam on the stove first. Add all jam ingredients to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly. 
  2. When it seems the blackberries are mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
  3. Add 3 tbsp chia seeds to the jam and mix it together, add an optional teaspoon of honey as well.
  4. To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
  5. Mix all oat base ingredients into a medium sized mixing bowl and set in fridge until jam is cool.
  6. Once the jam is ready, fill two jars evenly with the oat mixture.
  7. Top each jar with blackberry jam.
  8. Let the oats sit in the refrigerator overnight or up to three days before eating.
  9. When ready to serve, top with walnuts and almonds, granola or other optional toppings of choice.

Helpful Tips

  • Feel free to customize the berries depending on what you have in your kitchen. If you have extra blueberries fresh or frozen, you can use them to make the jam creating a true blueberry lemon flavor.
  • If desired, add an extra tablespoon of lemon curd to make that lemon flavor really stand out!
  • To make these oats dairy free, use Silk yogurt instead.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
