Overnight Oats
These mango blueberry oats are bright, creamy, and perfect when you want a breakfast that feels a little tropical. Ingredients
1 cup of rolled oats
1 scoop vanilla protein powder
3 tbsp chia seeds
4 tbsp coconut almond butter (divided)
¼ cup coconut yogurt
1 cup almond milk
1 large mango
⅓ cup blueberries
Directions
In a medium size mixing bowl add all ingredients except the almond butter and mix together.
Add 1 tbsp almond butter to the bottom of both jars.
Fill the jars roughly halfway with oat mixture.
Add 1 tbsp almond butter to each jar, do not stir.
Fill jars with remaining oat mixture.
Let the oats sit in the refrigerator overnight, or up to three days before eating.
When ready to serve, top with walnuts and almonds, shredded coconut or other optional toppings of choice.
Helpful Tips
Coconut yogurt works well in this recipe for a more tropical vibe, vanilla yogurt is a great substitution. If not using coconut yogurt, consider adding a teaspoon of coconut extract.
To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
