Overnight Oats


Orange and blueberry are such a comforting flavor combination in these overnight oats. The bright citrus adds a fresh sweetness while the blueberries bring a mellow, flavor that makes each bite feel cozy and satisfying. A layer of blackberry puree adds a deeper berry richness that ties everything together. These oats are creamy, nourishing, and easy to customize, making them a beautiful breakfast to look forward to in the morning.


Serving size: Two Jars

Ingredients

Oat base:

  • 1 cup rolled oats
  • 3 tbsp chia seeds
  • 1 scoop vanilla protein powder
  • 1 cup almond milk
  • 4 tbsp vanilla oat spread (divided)
  • ¼ cup yogurt
  • 2 mandaran oranges (diced small)
  • ¼ cup blueberries

Blackberry Puree:

  • 6 oz container blackberries
  • 1 tbsp yogurt
  • 1 tsp honey

Directions

  1. In a food processor, add all blackberry puree ingredients and mix until smooth. Set aside.
  2. Add all oat base ingredients, except the vanilla oat spread, to a medium sized mixing bowl and stir until combined.
  3. For a layered look, add 2 tbsp vanilla oat spread to the bottom of each jar.
  4. Fill both jars each halfway with the oat mixture.
  5. Divide the blackberry puree between two jars - do not stir.
  6. Pour the rest of the oat mixture in jars.
  7. Let the oats sit in the refrigerator overnight or up to three days before eating.
  8. When ready to serve, top with walnuts and almonds or other optional toppings of choice.

Helpful Tips

  • Feel free to customize the berries depending on what you have in your kitchen. Extra blueberries, raspberries or blackberries all work beautifully in this recipe.
  • To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
  • If omitting yogurt, I like to add a mashed banana to maintain a creamy texture.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
