Overnight Oats
If you love the classic flavor of a peanut butter and jelly sandwich, these PB&J overnight oats turn that comforting combo into a cozy, satisfying breakfast. Creamy peanut butter pairs perfectly with sweet, fruity jam, creating that familiar balance of rich and bright flavors in every bite. It’s a simple breakfast that feels a little fun and nostalgic, while still being nourishing and filling enough to start your day.
Serving Size: Two Jars
Ingredients
Oat base
1 cup rolled oats
2 tbsp chia seeds
1 scoop PB2 powdered peanut butter
1 cup almond milk
¼ cup yogurt
1 banana
4 tbsp crunchy or creamy almond butter
Jam base
16 oz (1 container) strawberries
1 tbsp lemon juice
1 tbsp water
2 tbsp sugar replacement
1 tsp honey (optional)
3 tbsp chia seeds
Directions
Make the jam on the stove first. Add all jam ingredients to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly.
When it seems the strawberries are mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
Add 3 tbsp chia seeds to the jam and mix it together, add an optional teaspoon of honey as well.
To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
For a layered look, add 2 tbsp of almond butter to the bottom of two jars.
Divide the oat mixture between both jars.
Divide the jam between two jars (do not stir).
Let the oats sit in the refrigerator overnight or up to three days before eating.
When ready to serve, top with walnuts and almonds or other optional toppings of choice.
Helpful Tips
I used fresh strawberries for the jam, but frozen strawberries work really well if you want a thicker, softer texture. Feel free to customize the jam by using your favorite berries. Raspberries, blueberries, or blackberries would all work beautifully.
To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
If omitting yogurt, I recommend adding an additional mashed banana to maintain a creamy texture.
I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
A crunchy almond butter adds a subtle crunch and nutty depth. Vanilla oat spread would work just as well.
Feel free to customize this recipe by using regular peanut butter or any other berries of choice for the jam that you have on hand.
