Overnight Oats


These strawberries and cream overnight oats are creamy, fruity, and so easy to make ahead. The homemade strawberry jam adds bright berry flavor and a thicker texture that blends perfectly into the oats. It’s a simple breakfast that feels comforting and satisfying, while still being easy to customize with your favorite toppings.

Serving size: Two jars

Ingredients

Oat base

  • 1 cup rolled oats
  • 3 tbsp chia seeds
  • 1 scoop strawberry protein powder
  • 1 cup almond milk
  • 1/4 cup yogurt
  • 4 strawberries (diced small)

Strawberry Jam

  • 16 ounce container of strawberries
  • 2 tsp lemon juice
  • 1 tbsp water
  • 1 tbsp sugar replacement
  • 1 tsp honey optional
  • 3 tbsp chia seeds

Directions

  1. First make the jam. Set aside 4 diced strawberries for the oat mixture. The rest of the diced strawberries add to a small pot.
  2. Add the lemon juice, water and sugar replacement to the pot.
  3. Turn the heat to medium. You will want to keep a close eye on the jam, stirring constantly. 
  4. When it seems the strawberries are mostly cooked down you can mash them up and remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
  5. Once removed from heat , add 3 tbsp of chia seeds to the jam and mix it together, add an optional teaspoon of honey as well.
  6. While the jam is cooling make the oat mixture.
  7. To cool the jam I leave it on the counter for 30 minutes, then place in the fridge for an hour before using in my recipes.
  8. Add the remaining 3 tbsp of chia seeds along with the 4 diced strawberries and all other oat base ingredients to a medium sized mixing bowl. Once everything is mixed set aside in the fridge until the jam is cooled.
  9. Once the jam is ready, layer the jars. Start by filling each jar halfway, then divide half of jam between two jars. Add remaining oat mixture. 
  10. Top with remaining jam. Let the oats sit in the refrigerator overnight or up to three days before eating.
  11. When ready to serve top with walnuts and almonds or additional optional toppings of choice.

Helpful Tips

  • If you want to save a little time, you can blend the strawberries into a quick puree instead of making the jam. It will still add lovely strawberry flavor, but the oats will be a bit less thick since you won’t get that jammy texture.
  • To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
  • If omitting yogurt, I like to add a mashed banana to maintain a creamy texture.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
