Overnight Oats

Each layer brings its own vibe, the sweet, tropical mango, the earthy hint of matcha, and the juicy pop of strawberry are all stacked into one creamy, satisfying jar. The soft pastel layers feel right at home in the spring! It’s the kind of breakfast that feels a little extra special, but still comes together effortlessly.

Ingredients
1.5 cup oats (divided)
1.5 cup almond milk (divided)
3 tbsp chia seeds (divided)
1 banana (mashed)
6 strawberries
1 large mango
1 tbsp + 1 tsp Matcha powder
1 tbsp strawberry protein powder
1 tbsp vanilla protein powder
6 tbsp yogurt (divided)
Directions
Prep the base for each layer: Divide 1.5 cups oats, 1.5 cups almond milk, 3 tbsp chia seeds, and 6 tbsp yogurt evenly among three bowls (½ cup oats, ½ cup almond milk, 1 tbsp chia, 2 tbsp yogurt per bowl). Label the bowls mango, strawberry, and matcha.
Mango layer: In a food processor, blend the mango, and 2 tbsp yogurt until smooth. Stir this mixture into the mango bowl along with 1 tbsp of vanilla protein powder with oats until fully combined. (Pureeing the mixture creates a pastel yellow color, however you can skip blending and simply dice the mango for a chunkier texture.)
Strawberry layer: In a food processor, blend 6 strawberries, and 2 tbsp yogurt until smooth. Stir this mixture into the strawberry bowl along with 1 tbsp of strawberry protein powder with oats until fully combined. (Pureeing the mixture creates a vibrant pink color, however you can skip blending and simply dice the strawberries for a chunkier texture.)
Matcha layer: Mash 1 banana and mix it with 1 tbsp + 1 tsp matcha powder, and additional 2tbsp yogurt, in the matcha bowl until smooth.
Assemble in jars: Layer the matcha, strawberry, and mango mixtures evenly into two jars, creating three distinct, colorful layers in each.
Chill: Refrigerate overnight or up to 3 days before serving. Top with fresh fruit, shredded coconut, and/or nuts.
Helpful Tips
If your mango isn't ripe enough, consider adding 1 tsp of honey to the food processor to give it some sweetness.
Don't have mango? For the yellow layer, feel free to mash up two bananas instead.
This is easily a customizable recipe. Swap out one of the layers for an orange flavor instead. (Diced up two mandarin oranges)
To make these oats dairy free, omit the yogurt or use Silk yogurt instead.
If omitting yogurt, I would add 1/3 of a mashed banana to each layer to maintain a creamy texture.
I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats; they will remain firm and chewy without cooking.
