Overnight Oats

Good morning! During my weight loss journey, I was looking for satisfying, and healthy breakfast recipes that I could get excited to eat. These creamy mango matcha oats offer a unique flavor with a tropical vibe. These oats are nourishing and antioxidant- rich, providing steady energy to start your day strong.

Serving Size: Two Jars

Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 3 tbsp chia seeds
  • 4 tbsp coconut almond butter
  • ¼ cup yogurt
  • 1 cup almond milk
  • 1 large mango
  • 2 tbsp matcha powder
  • 1 tsp coconut extract (optional if not using coconut almond butter)

Directions

  1. Mix all ingredients into a medium sized mixing bowl, except the almond butter.
  2. Add 1 tbsp almond butter to the bottom of both jars.
  3. Fill the jars roughly halfway with oat mixture.
  4. Add 1 tbsp almond butter to each jar.
  5. Fill jars with remaining oat mixture.
  6. Let the oats sit in the refrigerator overnight, or up to three days before eating.
  7. When ready to serve, top with walnuts, pecans and almonds or other optional toppings of choice.

Helpful Tips

  • Shredded coconut would work well in here, either mixed in the oat mixture or served on top.
  • The coconut almond butter pairs really well with the mango and matcha however, plain/crunchy almond butter or vanilla oat spread can be a great addition.
  • My choice of yogurt is the Too Good blended vanilla flavor. For dairy free option you can use Silk yogurt. If you want to omit the yogurt completely, I recommend adding a mashed banana to maintain a creamy texture.
  • I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
