Makes: Three Jars
Pictured: Two Jars
Ingredients
Homemade Plum Jam
8 plums (cored)
2 tbsp lemon juice
2 tbsp water
2 tbsp sugar replacement
4 tbsp chia seeds
Apple Oats
2 cups oats
1¾ cups almond milk
4 tbsp ground flax
2 scoops vanilla protein powder
¼ cup yogurt
1 tsp cinnamon
1 tsp maple extract
1 apple (diced small)
Directions
Make the jam on the stove first: Add all jam ingredients to a medium size pot, and stir constantly with medium heat. When it seems the plums are mostly cooked down, remove from heat and mash them up. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot. Add chia seeds to the jam and mix it together. To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
Apple oats: Add all apple oat ingredients to a medium sized mixing bowl, stir until combined. Set aside.
Complete jar assembly: For a layered look, add a small amount of jam to the bottom of each jar, followed by half the oat mixture, next add remaining jam then top with remaining oat mixture.
Let sit in the fridge overnight, or up to five days before eating.
When ready to eat, serve with fresh fruit, granola, or nuts.

Acacia Wood Cutting Board. I use this board in many of my recipe photos to display my overnight oats. I love the warm wood finish because it creates a simple, natural background that helps the jars and layers of oats stand out. It’s also reversible and can be used as a cutting board, charcuterie board, or serving board, making it a versatile piece to have in your kitchen.
Helpful Tips
Use ripe plums. Ripe plums will give your homemade jam a naturally sweeter flavor and softer texture.
No need to peel the plums. The skins soften as they cook and add beautiful color to the jam.
Jam shortcut option: While canned plum pie filling will work if you're short on time, I highly recommend making your own plum jam. It has a fresher plum flavor and creates a lighter breakfast with less added sugar than traditional pie filling. Plus, you can easily adjust the sweetness to your taste.
What type of apple is best? Any red apple works great in these oats. Use your favorite variety for a sweet, crisp bite that pairs nicely with cinnamon, vanilla, and maple.
To make these oats dairy free: Omit the yogurt or use Silk yogurt instead.
If omitting yogurt: Use a mashed banana to maintain creamy texture.
What types of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
