These Gingerbread Pear Overnight Oats bring together warm gingerbread spices, sweet diced pear, and creamy vanilla protein oats for a cozy breakfast inspired by the flavors of fall. A swirl of salted caramel spread adds a sweet, caramel-like finish that complements the ginger, cinnamon, and nutmeg. For an extra layer of pear flavor and a fuller jar, you can add an optional cooked pear topping before serving.

Pictured Size: Two Jars
Makes: Three Jars

Ingredients

Gingerbread Pear Oats

  • 2 scoops vanilla protein powder
  • 2 cups rolled oats
  • 1¾ cups almond milk
  • 4 tbsp ground flax
  • ¼ cup yogurt
  • 1 tbsp molasses
  • 1½ tsp ginger
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 pear (diced small)
  • ¼ cup salted caramel spread

Optional Cooked Pear Topping

  • 1 to 2 medium pears, diced small
  • 1 tsp butter
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • Pinch of nutmeg
  • 1 tbsp water
  • 1 to 2 tsp maple syrup (optional)

Directions

  1. Make the oats. Add all ingredients to a small bowl and stir until combined. Divide this mixture evenly between three jars.
  2. Optional Cooked Pear Topping. Add the butter and diced pears to a small saucepan over medium-low heat.Stir in the cinnamon, ginger, nutmeg, water, and optional maple syrup. Cook for 5 to 8 minutes, stirring occasionally, until the pears soften but still hold their shape. Add a little more water if the pan gets dry. Let the pears cool completely before spooning them over your overnight oats.
  3. Let the oats sit in the refrigerator overnight, or up to five days before eating.
  4. When ready to serve top with nuts, granola, cooked pears or other optional toppings of choice.

Sam's Kitchen Favorites

  • For this recipe, I used these 10 ounce overnight oat jars with lids.
  • I love these silicone mixing spoons. No more scraping the bowl, and the food doesn't stick to them!
  • My go-to angled liquid measuring cup . After multiple runs through the dishwasher, the numbers have not worn off.
  • For permanently engraved measurements, these measuring cups are fantastic!
  • For a more professional yet affordable mixing bowl, these stackable bowls with measurements marks work perfectly.
  • Food Processor. I recommend this for quickly turning graham crackers into fine crumbs, chopping nuts, blending ingredients, making sauces, and so much more.
  • KitchenAid Stand Mixer. I love using my KitchenAid mixer to make homemade whipped cream because it whips up quickly and easily while giving you a light, fluffy texture. It’s also a versatile kitchen tool that can be used for mixing batters, cookie dough, mashed potatoes, bread dough, and so much more!

Helpful Tips

  • If you want a stronger gingerbread-cookie flavor, increase the ginger to 2 teaspoons.
  • Don't skip the molasses if you want a true gingerbread taste. Without it, the recipe will taste more like cinnamon-ginger pear oats than gingerbread.
  • Want these oats to have more of a fall pie vibe? You could add a graham cracker crumble at the bottom of the jar. Blend 4 graham cracker sheets with 1 tbsp coconut oil in a food processor for best results.
  • Dairy-free option: Use Silk yogurt instead, you can also make a homemade jam instead of a yogurt layer.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You'll Love This Recipe

  • Warm and Spiced. Ginger, cinnamon, and nutmeg give these oats that familiar gingerbread flavor.
  • Sweet and Fruity. Diced pear adds natural sweetness and pairs perfectly with the warm spices.
  • Creamy and Satisfying. Vanilla protein powder and yogurt create a creamy overnight oats base.
  • Caramel Twist. Salted caramel spread adds a sweet, buttery flavor that makes every bite extra special.
  • Easy to Customize. Add an optional cooked pear topping to fill your jar, boost the pear flavor, and make your breakfast feel even more special.
