These Peach Apple Pie Parfait Oats bring together the cozy flavors of apple pie with sweet, juicy peaches and a creamy yogurt layer. The oats are made with vanilla protein powder, cinnamon, brown sugar replacement, and apples, then layered with a creamy peach and apple mixture and a buttery graham cracker crumble. It is a simple overnight oats recipe that tastes like a comforting fall dessert while still making a satisfying breakfast.

Serving Size: Three jars

Ingredients

Graham Cracker Crumble (Bottom Layer)

  • 4 graham cracker sheets
  • 1 tbsp coconut oil

Apple Oats (Middle Layer)

Apple Peach Yogurt (Middle layer)

Directions

  1. Apple Peach Yogurt. Start with the apples. Dice them fairly small and cook on stove over medium heat with all apple peach yogurt ingredients until they soften except the yogurt and chia seeds. Add the peaches afterward. Peaches soften much faster, so they only need a few minutes. Cook them together briefly at the end so the flavors combine.
  2. Stop cooking while there are still noticeable apple and peach pieces. You don't want it turning into applesauce or peach puree. Remove from heat and add the chia seeds.
  3. Let it cool completely before layering it into the oats. Mix cooled fruit with yogurt.
  4. Make the Graham Cracker Crumble. Blend graham crackers and coconut oil in a food processor until they are crumbs. Divide evenly between three jars.
  5. Apple Oats:  Add all apple oats ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars.
  6. Let sit in the fridge overnight, or up to five days before eating.
  7. When ready to eat, serve with fresh fruit, granola, or nuts. Homemade granola or a crumble would really enhance the pie flavor.

Helpful Tips

  • Keep the fruit chunky. Cook the apples and peaches until they are tender but still have some texture. You want little pieces of fruit throughout the creamy layer rather than a completely smooth puree.
  • Let the fruit cool first. Allow the cooked peach and apple mixture to cool completely before combining it with the yogurt. Adding hot fruit can make the yogurt thinner.
  • Do not skip cooking the apple and peaches on the stove. You can save time by simply dicing up the fruit and mixing them into the oats, however, cooking them gives these oats a pie filling flavor. If you choose not to cook them, consider adding cinnamon and nutmeg to your oats.
  • Add extra cinnamon if you love apple pie flavor. A little additional cinnamon in the fruit layer or sprinkled over the finished oats can make the cozy flavors stand out even more.
  • To make these oats dairy free: Omit the yogurt or use Silk yogurt instead.
  • If omitting yogurt: Use one mashed banana in each oat layer to maintain creamy texture.
  • What types of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You'll Love This Recipe

  • Cozy apple pie flavor. Cinnamon, apples, vanilla, and brown sugar create that familiar warm apple pie taste.
  • Sweet peach layer. Soft cooked peaches add a juicy sweetness that pairs beautifully with the cinnamon apples.
  • Creamy and fruity. The peach apple mixture folded into yogurt creates a smooth, creamy layer between the oats.
  • Beautiful layers. The graham cracker crumble, apple cinnamon oats, and peach apple yogurt layer make these oats especially pretty in a jar.
  • Satisfying breakfast. Vanilla protein powder, oats, flax, fruit, and yogurt make this a filling breakfast that can keep you satisfied for hours.
  • Easy to customize. You can adjust the sweetness, use your favorite yogurt, or add extra cinnamon to make the flavors your own.
