Ingredients
Graham Cracker Crumble (Bottom layer)
6 graham cracker sheets
1½ tbsp coconut oil
Apple Oats (Middle layer)
1 cup oats
¾ cup almond milk
2 tbsp ground flax
1 scoop vanilla protein powder
¼ cup yogurt
1 tbsp brown sugar replacement
½ tsp butter extract
3 stovetop cooked apples *see helpful tips section
Vanilla Cinnamon Oats (Top layer)
1 cup oats
1 cup almond milk
2 tbsp ground flax
1 scoop vanilla protein powder
¼ cup yogurt
1 tsp cinnamon
2 bananas (mashed)
1 tsp vanilla extract
Directions
Make the Graham Cracker Crumble. Blend graham crackers and coconut oil in a food processor until they are crumbs. Divide evenly between three jars.
Apple Oats: Add all apple oats ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars.
Vanilla Cinnamon Oats: Add all vanilla cinnamon oats ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars.
Let sit in the fridge overnight, or up to five days before eating.
When ready to eat, serve with fresh fruit, granola, or nuts. Homemade granola or a crumble would really enhance the pie flavor.

Helpful Tips
How to make stovetop apples. Dice 3 apples, cook on stovetop covered, over medium heat with desired amount of cinnamon, vanilla extract, butter and maple syrup for about 15 minutes until soft with a slight crunch. Uncover the last 5 minutes. Let them cool before adding to oat mixture.
Do not skip cooking the apples on the stove: You can save time by simply dicing up apples and mixing them into the oats, however, cooking them gives these oats true apple pie filling flavor. If you choose not to cook them, consider adding cinnamon and nutmeg to your oats.
To make these oats dairy free: Omit the yogurt or use Silk yogurt instead.
If omitting yogurt: Use one mashed banana in each oat layer to maintain creamy texture.
What types of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
