These Pumpkin Banana Overnight Oats are the perfect cozy breakfast for fall! Made with creamy banana milk, real pumpkin purée, mashed banana, warm spices, and a sprinkle of pecans, these oats are packed with comforting flavors in every bite. The banana adds natural sweetness and creaminess while the pumpkin and spices give them that delicious fall flavor you’ll want to enjoy all season long. Directions

  1.  Make the oats: Mash the banana in a medium sized mixing bowl. Add remaining oat ingredients to the bowl and stir until combined. Divide the oat mixture evenly between 3 jars.
  2. Let the oats sit in the refrigerator overnight. Or up to five days before serving.
  3. When ready to serve, top with pecans, walnuts and or banana slices!

  • Use a ripe banana: The riper the banana, the sweeter and more flavorful your oats will be.
  • Mash the bananas well: A smooth mash helps the banana flavor distribute evenly throughout the oat mixture.
  • Make sure to use pure pumpkin puree, not pumpkin pie filling! Pie filling is pre-sweetened and spiced, whereas pure canned pumpkin lets you control the sugar and flavor of your oats.
  • For a stronger pumpkin flavor, add 1 tsp pumpkin pie spice.
  • Don't have banana milk? Use almond milk instead. You can also add banana yogurt or banana protein powder to maintain the banana flavor.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
