These Strawberry Peach Paradise Overnight Oats bring together some of summer's best flavors in one delicious breakfast. The bottom layer combines sweet peaches, juicy mango, and tart raspberries with creamy vanilla protein oats, while the top layer features strawberry packed oats made with fresh strawberries and strawberry protein powder. Every spoonful is bursting with fruity flavor, plenty of protein, and a soft, creamy texture that makes mornings something to look forward to.

Ingredients

Berry Mango Oat Base (Bottom Layer)

Strawberry Oat Base (Top Layer)

  • 1 cup rolled oats
  • 1 cup almond milk
  • ¼ cup yogurt
  • 2 tbsp chia seeds
  • 1 scoop strawberry protein powder
  • ⅓ cup strawberries (diced small)

Directions

  1. Berry Mango Oat Base: Mix all berry mango oat base ingredients into a medium sized mixing bowl and stir until combined. Divide this mixture evenly between three jars.
  2. Strawberry Oat Base: Mix all strawberry oat base layer ingredients  into a medium sized mixing bowl and stir until combined. Divide this mixture evenly between three jars.
  3. Let the oats sit in the refrigerator overnight, or up to five days before eating.
  4. When ready to serve, top with pecans and walnuts, almonds, fresh fruit or toppings of choice.

Helpful Tips

  • Customize the berries depending on what you have in your kitchen. Extra raspberries, or extra strawberries, banana, blackberries and blueberries all work beautifully in this recipe.
  • Dairy free option. Use Silk yogurt or omit completely. If omitting yogurt, consider adding a mashed banana to maintain a creamier texture.
  • Don't have strawberry protein powder? Feel free to use vanilla protein powder instead, the fresh strawberries will still provide enough flavor. You can also use strawberry yogurt for a stronger flavor.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
