These Blueberry Peach Parfait Oats are a delicious and refreshing way to enjoy two of my favorite fruits together! Creamy peach and vanilla protein oats make up the top and bottom layers, while the middle is filled with a smooth blueberry yogurt layer made by blending fresh blueberries and yogurt together in the food processor. Every bite has the perfect combination of sweet peaches, juicy blueberries, creamy yogurt, and hearty oats. It’s a beautiful layered breakfast that feels a little extra special while still being easy to prepare ahead of time.

Ingredients

Peach Oats (Bottom and Top Layer)

Blueberry Yogurt Layer (Middle Layer)

  • 1 cup yogurt
  • ½ cup blueberries


Directions

  1. Make the Peach Oats. Add all peach oat layer ingredients to a small bowl and stir until combined. Divide half this mixture evenly between three jars.
  2. Make the Blueberry Yogurt Layer. In a food processor, add all blueberry yogurt layer ingredients and blend until smooth. Divide this mixture evenly between three jars.
  3. Complete jar assembly. Top jars with remaining oat mixture and extra blueberries!
  4. Let the oats sit in the refrigerator overnight, or up to five days before eating.
  5. When ready to serve top with fresh fruit, granola, nuts or other optional toppings of choice.

Helpful Tips

  • How to customize these oats: You can easily swap the berries depending on what you have in your kitchen. Extra blueberries, blackberries, or strawberries all work beautifully in this recipe.
  • Dairy-free option: Use Silk yogurt , or make a homemade jam instead of a yogurt layer.
  • Add a boost of protein!  Use greek yogurt, extra protein powder or even some blended cottage cheese
  • No vanilla protein powder? Feel free to use strawberry protein powder instead.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
  • Adjust the consistency. These oats are on the thicker side, for a creamier texture add up to an additional ½ cup almond milk.
