If you’re looking for a fun way to switch up your overnight oats, this one feels a little extra special. These Berry Glow Overnight Oats have a naturally vibrant blueberry, banana, and spirulina base that’s creamy, lightly sweet, and packed with goodness, then it’s finished with a fresh strawberry layer on top that adds the perfect bright contrast. It’s one of those recipes that looks impressive but is actually so simple to throw together, and it tastes just as good as it looks.

Serving size: Two Jars

Ingredients

Blueberry, Banana & Spirulina (Bottom layer)

Strawberry Oat Layer (Top layer)

  • ½ cup of rolled oats
  • 1 tbsp strawberry protein powder
  • 1 tbsp chia seeds
  • ½ cup almond milk
  • 6 strawberries (diced small)
  • ¼ cup yogurt

Directions

  1. Blueberry, Banana & Spirulina (Bottom layer). In a medium sized mixing bowl, mix all ingredients for the blueberry banana, spirulina layer, until combined. Divide this mixture evenly between two jars.
  2. Strawberry Oat Layer. In a medium sized mixing bowl, add all strawberry oat layer ingredients and mix until combined, divide this mixture evenly between both jars, creating a layered look.
  3. Let the oats sit in the refrigerator overnight, or up to five days before eating.
  4. When ready to serve, top with fresh fruit, walnuts and almonds or other optional toppings of choice.

Helpful Tips

  • Don't have strawberry protein powder? Vanilla protein powder is a great substitution.
  • To make these oats dairy free, omit the yogurt or use Silk yogurt instead. If omitting yogurt, I like to add an additional mashed banana to maintain a creamy texture.
  • No bananas on hand? Consider adding vanilla extract, and extra blueberries to the bottom layer, this will prevent the spirulina powder from becoming overpowering.
  • Swap the fruits based on what you have in your kitchen, stay away from citrusy fruits as they might clash a little with the earthy spirulina layer instead of blending smoothly.
  • Customize these oats further by using matcha powder in place of spirulina powder.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
