These Blueberry Strawberry Lemon Cheesecake Oats bring together bright, fruity flavors with creamy cheesecake-inspired layers for a delicious overnight oat combination. Strawberry protein oats are mixed with diced strawberries and lemon curd, then layered with a creamy cottage cheese and Greek yogurt filling and homemade blueberry jam. A graham cracker crumble adds the perfect finishing touch, making every spoonful a delicious mix of strawberry, lemon, blueberry, and cheesecake-inspired flavor.

Serving Size: Three jars

Ingredients

Graham Cracker Crust (Bottom layer)

  • 4 graham cracker sheets
  • 1 tbsp coconut oil

Strawberry Lemon Oats (Middle layer 1)

Cheesecake Inspired Filling (Middle layer 2)

  • 1 cup cottage cheese
  • ½ cup Greek yogurt
  • 1 tsp  lemon curd

Homemade Jam (Top Layer)

Directions

  1. Make the jam on the stove first. Add all jam ingredients to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly.
  2. When it seems the strawberries are mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
  3. Add chia seeds to the jam and mix it together.
  4. To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
  5. Make the graham cracker topping. Blend the graham crackers with coconut oil in a food processor until they are crumbs. Divide evenly between three jars.
  6. Strawberry Lemon Oats:  Add all strawberry lemon oat ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars.
  7. Cheesecake-inspired filling. Add all cheesecake filling ingredients to a food processor and blend until smooth. Divide this mixture evenly between the three jars.
  8. Finish jar assembly: Top each jar with ½ cup cooled jam.
  9. Let sit in the fridge overnight: Or up to five days before eating.
  10. When ready to eat: Serve with fresh fruit, granola, or nuts.

Sam's Kitchen Favorites

  • For this recipe, I used these 18-ounce overnight oat jars with lids.
  • I love these silicone mixing spoons. No more scraping the bowl, and the food doesn't stick to them!
  • My go-to angled liquid measuring cup . After multiple runs through the dishwasher, the numbers have not worn off.
  • For permanently engraved measurements, these measuring cups are fantastic!
  • For a more professional yet affordable mixing bowl, these stackable bowls with measurements marks work perfectly.
  • Food Processor. A kitchen essential that makes things like crushing graham crackers into fine crumbs so easy. I also use it for chopping, blending, and making all kinds of recipes.
  • Acacia Wood Cutting Board. I use this board in many of my recipe photos to display my overnight oats. I love the warm wood finish because it creates a simple, natural background that helps the jars and layers of oats stand out. It’s also reversible and can be used as a cutting board, charcuterie board, or serving board, making it a versatile piece to have in your kitchen.

Helpful Tips

  • Customize the layer arrangement. Feel free to arrange the different layers however you'd like. I recommend splitting the oat layer into two separate layers.
  • What type of fruit should I use? For this recipe I used frozen blueberries. Frozen berries work really well for the jam because they break down easily and create a thicker, softer texture. Fresh blueberries will work just as well! Raspberries, blackberries or strawberries in place of blueberries would all make beautifully in this recipe.
  • Jam Shortcut Option: While canned blueberry pie filling will work if you're short on time, I highly recommend making your own blueberry jam. It has a fresher blueberry flavor and creates a lighter breakfast with less added sugar than traditional pie filling. Plus, you can easily adjust the sweetness to your taste.
  • To make these oats dairy free: Omit the yogurt or use Silk yogurt instead.
  • If omitting yogurt: I like to add a mashed banana to maintain a creamy texture.
  • What types of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You'll Love This Recipe

  • Bright and fruity. Strawberry, lemon, and blueberry create a fresh combination of flavors that works beautifully together.
  • Cheesecake-inspired. The creamy cottage cheese, Greek yogurt, and lemon curd filling adds a smooth cheesecake-like layer without needing a complicated recipe.
  • Easy to customize. You can adjust the amount of lemon curd, blueberry jam, or fresh strawberries to make each layer exactly how you like it.
  • Satisfying. Strawberry protein powder, Greek yogurt, cottage cheese, and oats make these a filling breakfast that can keep you satisfied for hours.
  • Fun layers. The graham cracker crumble, strawberry lemon oats, creamy cheesecake-inspired filling, and blueberry jam make these overnight oats feel extra special while still being easy to prepare.
