If you love fruity desserts, these Blueberry Peach Pie Overnight Oats are a delicious way to enjoy those classic flavors in a wholesome breakfast. A buttery graham cracker crust is layered with creamy vanilla blueberry overnight oats and finished with a sweet homemade peach jam for the perfect balance of juicy fruit and cozy pie-inspired flavor. Packed with protein and easy to prepare ahead of time, this recipe is a fresh, satisfying breakfast that's perfect for busy mornings.

Ingredients

Graham Cracker Crust (Bottom layer)

  • 6 graham cracker sheets
  • 1½ tbsp coconut oil

Blueberry Oats (Middle layer)

Homemade Jam (Top Layer)

This makes enough jam for over 6 jars. Please see my recipe for Strawberry Peach Overnight Oats, for more ideas using this peach jam!

Directions

  1. Make the jam on the stove first. Add all jam ingredients to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly. 
  2. When it seems the peaches are mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
  3. Add 3 tbsp chia seeds to the jam and mix it together, add an optional teaspoon of honey as well.
  4. To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
  5. Make the Graham cracker topping. Blend 6 sheets of graham crackers and 1 tbsp coconut oil in a food processor until they are crumbs. Divide evenly between three jars.
  6. Blueberry Oats:  Add all blueberry oats ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars.
  7. Finish jar assembly: Top each jar with ½ cup cooled jam.
  8. Let sit in the fridge overnight: Or up to five days before eating.
  9. When ready to eat: Serve with fresh fruit, granola, or nuts. Homemade granola or a crumble would really enhance the pie flavor.

Helpful Tips

  • What type of fruit should I use? For this recipe I used fresh peaches however, frozen peaches work really well for the jam because they break down easily and create a thicker, softer texture.
  • Choose fresh blueberries: While frozen berries are great for making the jam, fresh blueberries create the best texture in the oat layer. Frozen blueberries can become mushy and release excess liquid as they thaw. Blackberries in place of blueberries would work well in this recipe.
  • Jam Shortcut Option: While canned peach pie filling will work if you're short on time, I highly recommend making your own peach jam. It has a fresher peach flavor and creates a lighter breakfast with less added sugar than traditional pie filling. Plus, you can easily adjust the sweetness to your taste.
  • To make these oats dairy free: Omit the yogurt or use Silk yogurt instead.
  • If omitting yogurt: I like to add a mashed banana to maintain a creamy texture.
  • What types of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
