These Chocolate Pumpkin Banana Parfait Oats bring together rich chocolate, creamy banana, warm pumpkin spice, and a little graham cracker crunch in every bite. The chocolate protein oats are naturally sweetened with mashed banana and layered with a creamy pumpkin yogurt mixture, while the graham cracker crumble on the bottom adds the perfect crunchy contrast. It’s a cozy fall-inspired breakfast that feels special without being overly sweet.

Pumpkin Yogurt Layer (Middle Layer)

  • 1 cup yogurt

Sam's Kitchen Favorites

  • For this recipe, I used these 16 ounce overnight oat jars with lids.
  • I love these silicone mixing spoons. No more scraping the bowl, and the food doesn't stick to them!
  • My go-to angled liquid measuring cup . After multiple runs through the dishwasher, the numbers have not worn off.
  • For permanently engraved measurements, these measuring cups are fantastic!
  • For a more professional yet affordable mixing bowl, these stackable bowls with measurements marks work perfectly.
  • Food Processor. I recommend this for quickly turning graham crackers into fine crumbs, chopping nuts, blending ingredients, making sauces, and so much more.
  • Acacia Wood Cutting Board. I use this board in many of my recipe photos to display my overnight oats. I love the warm wood finish because it creates a simple, natural background that helps the jars and layers of oats stand out. It’s also reversible and can be used as a cutting board, charcuterie board, or serving board, making it a versatile piece to have in your kitchen.

Helpful Tips

  • Dairy-free option: Use Silk yogurt , or make a homemade jam instead of a yogurt layer.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
  • Adjust the sweetness: The mashed banana adds natural sweetness to the chocolate oats, but you can add a small amount of maple syrup or your preferred sweetener if you like sweeter oats.
  • Use a ripe banana: A ripe banana will mash more easily and provide more natural sweetness and banana flavor.
  • Make the pumpkin layer creamy: Mix the pumpkin puree thoroughly with the yogurt and spices so the pumpkin layer has a smooth, creamy texture.
  • Add the top crumble before eating: If you want extra crunch, save a little graham cracker crumble for the top and add it just before serving.

Why You’ll Love This Recipe

  • Chocolatey and satisfying: Chocolate protein powder and chocolate almond milk create rich chocolate flavor while adding protein to your breakfast.
  • Naturally sweetened: Mashed banana adds natural sweetness and a creamy texture to the oats.
  • Warm fall flavors: The pumpkin yogurt layer adds creamy pumpkin spice flavor that pairs beautifully with the chocolate and banana.
  • Perfect texture: The graham cracker crumble adds a little crunch to contrast with the creamy oats and yogurt layer.
  • Easy to make: These parfait oats come together with simple ingredients and can be prepared ahead of time for an easy breakfast.
  • A fun layered breakfast: The different layers make these oats feel a little more special while still being nutritious and filling.
