If you love the cozy flavors of cinnamon dolce coffee, these Cinnamon Dolce Oats are a delicious way to enjoy those flavors in a creamy, satisfying overnight oats recipe. The oats combine cold coffee, mashed banana, vanilla protein powder, cinnamon, and a touch of brown sugar replacement for a naturally sweet and warmly spiced flavor. In the middle, a creamy layer of Greek yogurt and salted caramel spread adds a rich caramel flavor that pairs beautifully with the cinnamon and coffee. It is an easy recipe to prepare ahead of time and a delicious way to start your day.

Sam's Kitchen Favorites

  • For this recipe, I used these 16 ounce overnight oat jars with lids.
  • I love these silicone mixing spoons. No more scraping the bowl, and the food doesn't stick to them!
  • My go-to angled liquid measuring cup . After multiple runs through the dishwasher, the numbers have not worn off.
  • For permanently engraved measurements, these measuring cups are fantastic!
  • For a more professional yet affordable mixing bowl, these stackable bowls with measurements marks work perfectly.
  • Food Processor. I recommend this for quickly turning graham crackers into fine crumbs, chopping nuts, blending ingredients, making sauces, and so much more.
  • Acacia Wood Cutting Board. I use this board in many of my recipe photos to display my overnight oats. I love the warm wood finish because it creates a simple, natural background that helps the jars and layers of oats stand out. It’s also reversible and can be used as a cutting board, charcuterie board, or serving board, making it a versatile piece to have in your kitchen.

Helpful Tips

  • Use cooled coffee. Make sure the coffee is completely cooled before mixing it into the oats so it does not affect the texture of the other ingredients.
  • Adjust the coffee flavor. Use a little more or less coffee depending on how strong you want the coffee flavor to be. You can also replace some of the coffee with milk for a milder flavor.
  • Use a ripe banana: A ripe banana will mash more easily and provide more natural sweetness and banana flavor.
  • Adjust the caramel layer to taste. Add more or less salted caramel spread depending on how strong you want the caramel flavor.
  • Dairy-free option: Use Silk yogurt , or make a homemade jam instead of a yogurt layer.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You’ll Love This Recipe

  • Coffeehouse-inspired flavor. Cold coffee, cinnamon, vanilla, and brown sugar replacement give these oats that cozy cinnamon dolce flavor.
  • Creamy salted caramel layer. Greek yogurt blended with salted caramel spread creates a smooth, creamy middle that adds delicious caramel flavor to every bite.
  • Naturally sweetened with banana. Mashed banana adds sweetness and makes the oat mixture extra creamy.
  • High in protein. Vanilla protein powder and Greek yogurt help make these oats more filling and satisfying.
  • Easy to prepare ahead. Mix everything together, layer it in your jar, and let the refrigerator do the work overnight.
  • A delicious change from traditional oats. The combination of coffee, cinnamon, banana, and salted caramel makes this a fun and unique overnight oats flavor.
