2 cups of rolled oats
1 scoop chocolate protein powder
4 tbsp chia seeds
2 cups chocolate almond milk
⅓ cup cold brew coffee
¼ tsp butter extract
½ tsp vanilla extract
2 tsp cocoa powder
¼ cup yogurt
1 banana (mashed)
⅓ cup chocolate chips
Pinch of cinnamon
Pinch of salt
Homemade Whipped Cream (Top Layer)
¼ tsp vanilla extract
2 tbsp powdered sugar replacement
1 can coconut cream (refrigerated overnight)
1 tsp Espresso powder, plus extra for dusting
Directions
Coffee Mocha Oat base: Add all ingredients to a medium sized mixing bowl, stir until combined. Divide evenly between three jars.
Homemade whipped cream layer: Open the can of coconut milk and scoop out the thick, white cream from the top, leaving the clear liquid at the bottom, and add this to the bowl of a KitchenAid mixer. Next, add the powdered sugar replacement, vanilla extract, and cold brew and mix until soft peaks form. Top both jars with homemade whipped cream.
Let the oats sit in the refrigerator overnight, or up to five days before serving.
When ready to serve, top with nuts and or granola.

Helpful Tips
Use cold brew coffee. For a smooth coffee flavor that's less bitter than regular brewed coffee.
For a sweeter mocha. Add a few extra chocolate chips on top before serving.
Meal prep friendly. Store the oats in an airtight container in the refrigerator for up to 5 days.
Dairy free option. Omit the yogurt or use Silk yogurt instead. If omitting yogurt, I would add an additional mashed banana to maintain a creamy texture.
Use rolled oats. Quick oats may be used, for a softer consistency.
Avoid using steel-cut oats. They will remain firm and chewy without cooking.
