Cookies & Cream Overnight Oats

These Cookies and Cream Oats are a fun, creamy take on a classic chocolate and vanilla combination. The jar starts with a rich chocolate oat layer made with black cocoa, followed by a creamy vanilla protein oat layer. For the top layer, mini dark chocolate sandwich cookies are blended with yogurt in a food processor and combined with the vanilla oats, creating a smooth cookies-and-cream flavor throughout the creamy top layer. With just two layers and plenty of chocolate cookie flavor, these overnight oats are as delicious as they are easy to prepare.

Acacia Wood Cutting Board. I use this board in many of my recipe photos to display my overnight oats. I love the warm wood finish because it creates a simple, natural background that helps the jars and layers of oats stand out. It’s also reversible and can be used as a cutting board, charcuterie board, or serving board, making it a versatile piece to have in your kitchen.
Helpful Tips
Dairy-free option: Use Silk yogurt , or omit entirely. If omitting yogurt ad a mashed banana to the vanilla cream oats.
What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
Want more chocolate flavor? You can use chocolate almond milk in place of regular. Consider adding additional Oreos as well.
No black cocoa powder? Regular unsweetened cocoa powder works perfectly fine. The chocolate layer will be lighter in color, but it will still have a delicious chocolate flavor.
Adjust the chocolate flavor. If you are using regular cocoa powder instead of black cocoa, you can add a little extra cocoa powder if you want a richer chocolate flavor.
Use a ripe banana: A ripe banana will mash more easily and provide more natural sweetness.
Make the pumpkin layer creamy: Mix the pumpkin puree thoroughly with the yogurt and spices so the pumpkin layer has a smooth, creamy texture.
Add the crushed cookies before eating: If you want extra crunch, add some crushed cookies to the top.
