These Cranberry Walnut Orange Oats are a simple, flavorful combination of sweet mandarin oranges, tart dried cranberries, creamy vanilla almond yogurt, and crunchy chopped walnuts. Everything is mixed together in one jar, making these overnight oats especially easy to prepare. The vanilla protein powder adds a creamy sweetness while the cranberries and mandarin oranges give each bite a bright, fruity flavor.

Makes: Three Jars

Ingredients

  • 2 cups rolled oats
  • 2 scoops vanilla protein powder
  • 4 tbsp flax meal
  • ¼ cup yogurt
  • 1¾ cup almond milk
  • 1 small apple (diced small)
  • 2 mandarin oranges (diced small)
  • ⅓ cup dried cranberries
  • ⅓ cup chopped walnuts
  • ¼ tsp cinnamon

Directions

  1. Add all ingredients to a medium sized mixing bowl, mix together well.
  2. Divide the oat mixture evenly between two jars.
  3. Let the oats sit in the refrigerator overnight, or up to three days before eating
  4. When ready to serve, top with pecans or walnuts and almonds or other optional toppings of choice.

Helpful Tips

  • Chop the oranges into smaller pieces. This helps distribute the citrus flavor throughout the oats and makes them easier to enjoy in each bite.
  • Use chopped walnuts. Smaller pieces spread throughout the oats give you a little crunch in nearly every bite without making the texture too chunky.
  • Use dried cranberries. They soften in the oats overnight, and add a sweet, chewy texture.
  • Flax meal is my favorite for this recipe because it thickens the oats and adds a subtle, cozy fall flavor. If you don't have flax meal, chia seeds or flax seeds make a great substitute.
  • Dairy free option. Omit the yogurt or use Silk yogurt instead. If omitting yogurt, I like to add a mashed banana to maintain a creamy texture.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You'll Love This Recipe

  • Easy one layer recipe. Everything is mixed together in one jar, so there are no separate layers or complicated steps.
  • Sweet and fruity. Mandarin oranges and dried cranberries bring a delicious combination of bright citrus and tart sweetness.
  • Creamy and satisfying. Vanilla almond yogurt and vanilla protein powder give the oats a creamy texture and added protein.
  • Crunchy texture. Chopped walnuts add a little crunch that pairs perfectly with the soft oats and fruit.
  • Easy to customize. You can adjust the amount of cranberries, oranges, or walnuts to make these oats just how you like them.
