These Key Lime Pie Overnight Oats are creamy, bright, and inspired by the classic dessert. Layers of tangy key lime yogurt, fluffy homemade lime whipped cream, and graham cracker crumbs come together for a breakfast that tastes like a slice of chilled key lime pie in a jar. The fresh lime juice and zest give every bite a refreshing citrus flavor while the whipped cream keeps the texture light and smooth.

Serving Size: Two jars
Ingredients
Key Lime Oats
1 cup rolled oats
1 cup coconut milk
2 tbsp chia seeds
1 scoop vanilla protein powder
5.3 ounce container Greek lime yogurt
2 sheets graham crackers (optional, for bottom layer)
Homemade Whipped Cream
1 can coconut milk (refrigerated over night)
2 tbsp powdered sugar replacement
1 lime (juice and zest)
Directions
Make the bottom "pie crust". If using the graham crackers, blend in food processor with coconut oil, until they are crumbs. Divide evenly between two jars.
Make the oat mixture. Add all oat base ingredients (except the graham crackers) to a medium sized mixing bowl, stir until combined. Divide mixture evenly between two jars.
Make the whipped cream. Open the can of coconut milk and scoop out the thick, white cream from the top, leaving the clear liquid at the bottom, add this to the bowl of a kitchen aid mixer. Add the powdered sugar replacement, lime zest, lime juice and mix until soft peaks form. Top both jars with homemade whipped cream.
Let sit in the fridge overnight, or up to five days before eating.
When ready to eat serve, top with homemade granola (or graham cracker crumbs) for a classic key lime pie vibe. Almonds, pecans or walnuts are always a great addition!

Dairy free option: Omit the yogurt or use Silk yogurt instead. If omitting the yogurt, I recommend adding a mashed banana to maintain a creamy texture.
What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats; they will remain firm and chewy without cooking.
