Lemon Berry Sunrise Overnight Oats

These layered overnight oats are bright, creamy, and packed with fresh berry flavor in every spoonful. The bottom lemon curd oat layer brings a rich citrusy sweetness, the middle raspberry lemon yogurt layer is smooth and tangy, and the fresh blueberry oat topping adds the perfect burst of freshness. It tastes like a cross between a lemon berry parfait and a chilled spring dessert, while still being filling enough for breakfast.

Serving Size: Two jars
Ingredients
Lemon Oat Layer
1 cup rolled oats
1 cup coconut milk
2 tbsp chia seeds
1 scoop vanilla protein powder
2 tbsp lemon curd
Raspberry Lemon Yogurt Layer
6 ounce container raspberries
5.3 ounce container greek lemon yogurt
Blueberry Oat Layer
⅓ cup blueberries
½ cup coconut milk
½ cup rolled oats
1 tbsp vanilla protein powder
Directions
Lemon Oat Layer: Add all lemon oat layer ingredients to a mixing bowl and stir until combined. Divide this mixture evenly between two jars.
Raspberry Lemon Yogurt Layer: In a food processor, blend the container of yogurt and the container of raspberries. Pureeing the mixture creates a creamy texture, however you can skip blending and simply dice the raspberries for a chunkier texture.
Blueberry Oat Layer: Add all blueberry oat layer ingredients to a mixing bowl and stir until combined. Divide this mixture evenly between two jars.
Chill: Refrigerate overnight or up to 5 days before serving. Top with fresh fruit, shredded coconut, and/or nuts.

Helpful Tips
Use fresh fruit. Fresh fruit can help prevent your overnight oats from becoming too liquidy. Frozen fruit releases extra moisture as it thaws, which can thin out the oats.
Stir well before refrigerating. Make sure the protein powder and chia seeds are fully mixed in so the oats set evenly without any clumps.
Adjust the consistency. If your oats are thicker than you like after chilling overnight, stir in a splash of milk before serving.
Meal prep friendly. Store the oats in an airtight container in the refrigerator for up to 5 days.
Dairy free option. Omit the yogurt or use Silk yogurt instead. If omitting yogurt, I would add an additional mashed banana to maintain a creamy texture.
What type of oats are best? I prefer rolled oats. Quick oats may be used, for a softer consistency.
Avoid using steel-cut oats. They will remain firm and chewy without cooking.
