Peach Strawberry Overnight Oats

Creamy strawberry oats are layered with a naturally sweet homemade peach jam, creating the perfect balance of juicy fruit flavors in every bite. Ingredients
Strawberry Oats (Bottom & Top Layer)
2 cups oats
1½ cups almond milk
4 tbsp chia seeds
2 scoops strawberry protein powder
¼ cup yogurt
1 cup strawberries (diced small)
Homemade Jam (Middle Layer)
16 small sized peaches (pealed &pitted)
4 tbsp lemon juice
2 tbsp water
4 tbsp sugar replacement
1 tsp honey optional
6 tbsp chia seeds
This makes enough jam for over 6 jars. Please see my recipe for Blueberry Peach Pie, for more ideas using this peach jam!
Directions
Make the jam on the stove first. Add all jam ingredients to a medium size pot. Turn the heat to medium, you will want to keep a close eye on the jam, stir constantly.
When it seems the peaches are mostly cooked down, remove from heat. I recommend putting the jam in a bowl to help cool down faster and to prevent sticking to the pot.
Add 3 tbsp chia seeds to the jam and mix it together, add an optional teaspoon of honey as well.
To cool the jam, leave it on the counter for 30 minutes, then place in the fridge for an hour before using in oats. While the jam is cooling make the oat mixture and place in fridge until ready to assemble jars.
Strawberry Oats: Add all strawberry oats ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars. Set aside.
Assemble the jars: To create the layered look, start by dividing half of the oat mixture evenly between 3 jars. Next add ½ cup jam to each jar. Top jars with remaining oat mixture.
Let sit in the fridge overnight: Or up to five days before eating.
When ready to eat: Serve with fresh fruit, granola, or nuts. Homemade granola or a crumble would really enhance the pie flavor.

Helpful Tips
What type of fruit should I use? For this recipe I used fresh peaches however, frozen peaches work really well for the jam because they break down easily and create a thicker, softer texture.
Choose fresh strawberries: While frozen strawberries are great for making the jam, fresh strawberries create the best texture in the oat layer. Frozen strawberries can become mushy and release excess liquid as they thaw.
Jam Shortcut Option: While canned peach pie filling will work if you're short on time, I highly recommend making your own peach jam. It has a fresher peach flavor and creates a lighter breakfast with less added sugar than traditional pie filling. Plus, you can easily adjust the sweetness to your taste.
To make these oats dairy free: Omit the yogurt or use Silk yogurt instead.
If omitting yogurt: I like to add a mashed banana to maintain a creamy texture.
What types of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
