Sweet strawberries and strawberry protein powder are blended into a creamy oat base, while a mixture of raspberries and cottage cheese adds a rich cheesecake inspired flavor to every bite. Ingredients


Strawberry Oat base

Cheesecake mixture

  • ½ cup raspberries
  • ⅓ cup cottage cheese

Directions

  1. Strawberry Oat base: In a medium sized mixing bowl, combine all Strawberry Oat base  ingredients and mix well. Set aside.
  2. Cheesecake mixture: Add the cheesecake mixture ingredients to a small food processor, and mix until smooth.
  3. Assemble the jars: Add the cheesecake mixture to the oat mixture bowl and mix until incorporated. Divide the oats evenly between four jars.
  4. Let oats sit in the refrigerator overnight or up to five days before serving.
  5. When ready to serve top with almonds and walnuts, fresh berries, or other desired toppings.

Helpful Tips

  • Customize the fruit. Any combination of strawberries and raspberries, blueberries & blackberries all work well in this recipe!
  • What type of cottage cheese is best? I prefer to use the small curd with 4% milk fat.
  • Cheesecake layer. You can mix the cheesecake layer by hand, but blending it in a food processor gives you a much smoother, creamier texture instead of a slightly chunky one.
  • What type of oats should I use?  I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.
  • Need an extra protein boost? Add ¼ cup Greek yogurt.
