These Strawberry Cloud Oats are a light and dreamy way to enjoy the fresh flavor of strawberries in a creamy overnight oats recipe. Strawberry protein powder and fresh diced strawberries are mixed right into the oats, while a homemade strawberry whipped cream layer adds a soft, fluffy texture in the middle. Strawberry extract and dried strawberries give the whipped cream even more strawberry flavor, making every bite taste like a sweet strawberry treat.

Ingredients

Strawberry Oats (Bottom & Top Layer)

Homemade Whipped Cream (Middle Layer)

Directions

  1. Strawberry Oat Layer. In a medium sized mixing bowl, add all strawberry oat layer ingredients to the mixing bowl and stir until combined. Divide half this mixture evenly between three jars.
  2. Make the whipped cream. Open the can of coconut milk and scoop out the thick, white cream from the top, leaving the clear liquid at the bottom, add this to the bowl of a kitchen aid mixer. Add the powdered sugar replacement, and strawberry extract, mix until soft peaks form. Gently fold in the dried strawberries. Divide the whipped cream evenly between 3 jars.
  3. Complete Jar assembly. Top jars with remaining strawberry oat mixture.
  4. Let the oats sit in the refrigerator overnight or up to five days before eating.
  5. When ready to serve, top with nuts, homemade granola, fresh fruit or other optional toppings of choice.

Sam's Kitchen Favorites

  • For this recipe, I used these 16 ounce overnight oat jars with lids.
  • I love these silicone mixing spoons. No more scraping the bowl, and the food doesn't stick to them!
  • My go-to angled liquid measuring cup . After multiple runs through the dishwasher, the numbers have not worn off.
  • For permanently engraved measurements, these measuring cups are fantastic!
  • For a more professional yet affordable mixing bowl, these stackable bowls with measurements marks work perfectly.
  • KitchenAid Stand Mixer. I love using my KitchenAid mixer to make homemade whipped cream because it whips up quickly and easily while giving you a light, fluffy texture. It’s also a versatile kitchen tool that can be used for mixing batters, cookie dough, mashed potatoes, bread dough, and so much more!
  • Acacia Wood Cutting Board. I use this board in many of my recipe photos to display my overnight oats. I love the warm wood finish because it creates a simple, natural background that helps the jars and layers of oats stand out. It’s also reversible and can be used as a cutting board, charcuterie board, or serving board, making it a versatile piece to have in your kitchen.

Helpful Tips

  • To make these oats dairy free. Omit the yogurt or use Silk yogurt instead.
  • Use fresh strawberries. Fresh diced strawberries work especially well in the oats because they add strawberry flavor without releasing as much liquid as frozen strawberries can.
  • Keep the whipped cream in the middle. Adding it between the oat layers helps preserve its fluffy texture and gives the jar its signature cloud-like center.
  • No strawberry protein powder? You can substitute vanilla protein powder instead and add a little extra finely diced or mashed fresh strawberries to the oats for more strawberry flavor. You could also use an unflavored protein powder if you prefer.
  • No strawberry extract? Simply leave it out and let the dried strawberries and fresh strawberries provide the strawberry flavor in the whipped cream. For an even stronger strawberry flavor, you can crush the dried strawberries into a fine powder before mixing them into the whipped cream.
  • What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats, they will remain firm and chewy without cooking.

Why You'll Love This Recipe

  • Fresh strawberry flavor. Fresh diced strawberries and strawberry protein powder give the oats plenty of strawberry flavor.
  • Light and fluffy. The homemade whipped cream layer creates a soft, airy texture that makes these oats feel extra special.
  • Extra strawberry goodness. Strawberry extract and dried strawberries add another layer of strawberry flavor to the whipped cream.
  • Easy to customize. You can adjust the sweetness or add more fresh strawberries depending on how you like your oats.
  • Beautiful layers. The creamy strawberry whipped cream in the center creates a pretty contrast between the strawberry oats, making these perfect for a layered jar.
  • Perfect for meal prep. Prepare them the night before for a breakfast that's ready when you are.
