If you're a fan of classic strawberry shortcake, you're going to love waking up to these Strawberry Shortcake Overnight Oats. Creamy strawberry oats are layered with a light and fluffy homemade strawberry whipped cream, then topped with buttery graham cracker crumbs for that signature shortcake-inspired flavor. They're easy to prep ahead, packed with protein, and make a delicious breakfast that feels a little like dessert while still keeping you satisfied all morning long.

Ingredients
Strawberry Oat Base (Bottom Layer)
1½ cup rolled oats
1½ cups almond milk
3 tbsp chia seeds
1 scoop strawberry protein powder
⅓ cup yogurt
½ heaping cup of diced strawberries
Graham Cracker Topping
5 graham cracker sheets
Homemade Whipped Cream (Middle Layer)
1 can coconut milk (refrigerated over night)
2 tbsp powdered sugar replacement
1 tsp strawberry extract
Directions
Strawberry Oat base: Add all strawberry oat base ingredients to a medium sized mixing bowl, stir until combined. Divide mixture evenly between three jars.
Make the graham cracker topping. Blend the graham crackers in a food processor until they are crumbs. Divide evenly between three jars.
Make the whipped cream. Open the can of coconut milk and scoop out the thick, white cream from the top, leaving the clear liquid at the bottom, add this to the bowl of a kitchen aid mixer. Next add the powdered sugar replacement and strawberry extract, mix until soft peaks form. Divide the homemade whipped cream evenly between three jars.
Let sit in the fridge overnight, or up to five days before eating.
When ready to eat serve top with fresh strawberries for a classic strawberry shortcake vibe. Homemade granola, almonds, pecans or walnuts are always a great addition!

Helpful Tips
Why make the whipped cream? It easy to make, tastes fresh, light and fluffy! I love making it from scratch because you can control the sweetness and ingredients, however store bought works as well if you want to save time.
Graham cracker alternatives. Vanilla wafer cookies would work perfectly. If you want more of a dessert vibe, use angel food cake instead.
Customize this recipe by adding strawberry sauce, strawberry jam, or even angel food cake topping.
Dairy free option. Omit the yogurt or use Silk yogurt instead.
Looking for an extra boost of protein? Add extra protein powder, and or/ use greek yogurt.
What type of oats are best? I prefer rolled oats, but quick oats may be used as well for a softer consistency. Avoid using steel-cut oats; they will remain firm and chewy without cooking.
